Quick Pickled Beets

1 bunch of Beets; 4-5 full size beets or 8-10 baby beets

1/4 cider vinegar or red wine vinegar (or your favorite...experiment!)

1 Tbls Sugar

1 Tbls Oilive oil

1/2 teaspoon dijon mustard

salt and pepper to taste

Remove greens and wash the beets. Steam or boil beets for about 20-30 minutes or until you can easily stick a fork into them. Do not over boil, I like my beets a bit crunchy. Rinse under cold water until you can handle them. The skin should peel right off if you give it a pinch. Throw skins in the compost bin. Cut beets into whatever size you like. I quarter them. Put them in a medium size bowl that you will then transfer into the fridge.

Add all ingredients into another bowl and whisk.  Add salt and pepper to taste. Pour over beets and put them in the fridge forat least 2 hours or over night. Enjoy!
